Cheesy Mashed Potatoes

When I think of Thanksgiving and Christmas, it isn't the choice of meats that come to mind. It's the sides. It's all about the sides.  Vegetables and starches covered in cheesy sauces. It's the two times of years I really indulge.  By the end of Christmas week, I'm done.  Just roll me down the street and feed me a bed of greenery because this goose has popped.  

Until we roll down that road together, I must insist on sharing with you yet another favorite side dish:  Cheesy Mashed Potatoes.  Think twice-baked potatoes, which is where this recipe originated from.  We took what would normally go into a twice baked potato and made it into a casserole of cheesy goodness.  Don't be scared of what goes inside.  Don't even think about it.  Just bake, eat, and love.  

Add this cheesy goodness to your Thanksgiving meal.  Add it to your holiday meal.  Add it to any special occasion.  It's one of those sides your friends and family will look forward to eating every time you have a special get together.

Cheesy Mashed Potatoes
Cheesy and creamy mashed potatoes. A break from the traditional mashed and buttery side dish, this recipe doesn't need gravy to make it edible. A definite crowd pleaser.
  • 4-6, peeled and chopped into one-inch pieces Russet Potatoes
  • 1 stick (1/2 cup) unsalted butter
  • 1 large egg
  • 1 cup sour cream
  • 2 cups grated cheddar cheese
1. In a stockpot, bring peeled and chopped potatoes to a boil. Cook over medium heat until tender in the middle. Drain well.2. In a large mixing bowl, add the hot potatoes and butter. Allow the butter to melt in the potatoes. Once melted, add the egg and sour cream. Using the whisk attachment, beat at high speed until the mixture is creamy and most of the lumps are gone. It's okay to leave a few.3. Add 1 cup grated cheese and stir to mix it in.4. Bake, covered, at 350 degrees for 30 minutes. Remove cover and add one cup of cheddar cheese to the top. Bake for another 15 minutes or until the cheese has melted.
